Creating Bilingual Site as 2 Separate Sites

Hi, I would like to ask if I can create 2 separate sites from a Bilingual site? Right now, I’ve used Polylang to create an English-Chinese website. However, it turns out that Google Analytics is affecting my website’s usage for users in China.
Hence, I would like to separate my sites into 2 separate sites; i.e when user first login to the homepage, they will choose their preferred language. If English is chosen, they will be brought to an English site with Google Analytics and if they selected Mandarin as their preferred language, they will be brought to a Mandarin site with a China-approved Google analytics equivalent.
Is it possible to do that while maintaining content and changes on one single WP admin dashboard?
