    Smooth slider does not having feature as per your requirement. But we can do it using listic slider by little bit customization. Please have look demo of listic slider.

    To be clear, we have #17 categories in the “knowledge” section, and we need to display the latest (only one) post from each of those #17 categories.

    Your Listic slider will allow us to choose those #17 categories, and then pull ONLY the latest post from each?

    Can it also display the category that the post came from? (same as on the original site home page)

    Yes, You can create Category slider in Listic slider which fetches latest posts from category. And you can also show category of post in slider.

    Do you want to create only one slider and fetch latest only one posts from each category?
