    I added an new field for customers to fill in their fiscal number as we need it to send them their invoices, it appears for the customer to fill out on screen, however it doesn′t appear in the order email that we receive. Is this a premium function or is it something we are not doing right?

    If the custom fields are showing in the default WooCommerce email then they will be showing in the Email customizer template. If it is not showing then you may need to check the hook in which the custom fields are showing in the default email and need to add the same hook in the email customizer template.
