Custom fields on review site

I am creating a wine review site and I have several reviewers taking part but what I want is for them to select a country the wine is from, a vintage etc, as well as writing their review. This way I will have control over the layout etc.

Is this something I can do in WP, and do I need a plugin? These guys are not strong with IT so the simpler I can make it for them the better, even if I need do more work my side.
