Custom Fields Problem

After creating a custom field, the default action is to add this field to all sheets which is a terrible flaw. You don’t have an option to clear the custom field from the front end so now stuck with these on all subsequent sheets _ OR _ must assign to existing sheet which is also unacceptable. So, where can I fix this (by deleting the custom fields), is it in the database. Please let me know.
