Custom Fuction for Basic UPS and USPS plugins

I am trying to create a custom function that will work with both plugins. What i want to do is restrict the shipping method to only ups ground if a specific category of product is added to the cart. Ive looked through the php a d can’t seem to find how the rates are pulled in. Can someone assist me in writing this function. I have some php experience but this one has me stumped.
