Custom Plugin Options Resetting

I am currently in the midst of creating a plugin for a template to extend the options. I have seperated the options into submenus and such. It was all working fine on one page, but when I seperated them whenever I would submit a form on one page it would reset the variables on the other pages. All my fields are set to have the default value in it but for some reason once the form gets submitted on one page all the other plugin_option variables reset, any help?
