Custom RSS (# of entries per category, 1 feed?)

Is there a way to customize the RSS feed output so that there’s only the latest entry per category, without having to do multiple RSS feed calls based on different categories?

So we have 7 categories of posts. We want to display the latest post from each category regardless of when a post was last added to that category.
