    There are 3 possibilities:

    1. Strings that are not edited will use the default translation from the WooCommerce language files (which you and check and edit with Loco translate.

    2. When strings are edited in WooCommerce, Settings, Email (/wp-admin/admin.php?page=wc-settings&tab=email) they are added to Polylang strings translation table and the translations can be edited there.

    3. if you have customised .php files for email templates then the translation mechanism will depend on how these are implemented. (these are typically located in your theme directory under /woocommerce/emails

    Thanks @jonathanmoorebcsorg for your help.
The texte I want to translate is not in Strings that are edited.
So I should use Loco Translate ?
That means to manage translation of WordPress and Woocommerce, I need 3 plugins : Polylang, Hyyan WooCommerce Polylang Integration and Loco Translate ?

    Yes,
Loco Translate helps you customise vendor strings from source code and translation files,
Polylang helps you customise strings configured in admin interface
