Customize Categories for better Menu

Hi, i am interested in creating a menu like the one in this site in the sidebar this person has Music Genres and other categories integrated into the sidebar and each one has different posts, when i add two new categories, they both have the same posts. how can i costumize the categories on my side bar so that i can create a more comfortable menu with the posts seperated into their own sections.
By the way i already know parent post and child posts and all that, but thats not what i want, the menu is too small and doesnt stand out that way. thanks for any help!
