Customize menu in top navigation

Greetings,
I would like to change the color of the flyouts under each of the menu items in the top navigation. I have figured out how to change the colors on everything else, but cannot figure out how to edit the flyouts.

Also, I would like to remove the “>>” that is after the menu items in the top navigation bar. Where do I go to do this please?
