Customizing the Loop

I am trying to customize the Loop — specifically, I want to edit the meta section on posts on category archive pages. I swear I’ve gone into every php file in the theme and tried editing them (removing the entire meta section as a test) without impacting the site. Can any give me guidance on where I can find this? Thank you!
