Data entered, replaced with "A" when saved

Recent issue occurring on one of my sites utilizing CFT, in that any data entered into the fields is replaced with the letter “A” when the post is saved.
No new updates or plugins, it was working fine last week. This is very sudden. I’ve tried deactivating/reactivating the plugin, clearing caches, no help. Plugin is up to date as is WordPress.
Old posts are unaffected and still have their data, although I have refrained from updating those posts in fear their data will be replaced too.
Basically no matter what I enter in any of my fields (text, text area, etc), once I update the post all that data is gone and all I see is “A”.
Any ideas as to how to resolve?
