Date selector in application form

Hi there,
We are using your job manger plugin and think it’s fantastic thanks very much! Just a couple of problems. The date selector for D.O.B only goes back as far as 2004 and there is also an email address already entered by default. As this plugin was installed before i began working on the site, I don’t know where to look to change these settings. could someone point me in the right direction please?
