Default payment type of manual

Hi
We take all our payments for invoices via bank transfer and generally do not want to give customers any other options, such as Paypal, in order to minimise our costs.
Would it be possible to have manual payment as a default payment option? It feels like it should be a simple change to the default payment drop down – but what do I know?
