Default to use only Virtual product

    I am creating a marketplace for virtual products only. Can I set to default virtual products for the vendors to add and hide all the other options like shipping, etc. ?

    Yes, you can surely create virtual products using Dokan. But I am afraid you are unable to hide all the other options by default. You will require custom coding in order to achieve your goal.
