Default Yoast Schema vs Manual Schema

I have two categories coming up under my schema.org testing tool for https://mirabalphotography.com. ‘organization’ which is Yoast’s plugin’s default, AND the new schema I’ve learned, ‘ProfessionalService’. Is it ok that I have two ‘itemtypes’, or should I only have one? IS there a way to bypass Yoasts markup?
