Defining Field Names

Is there any way to define the field names for custom fields? The plugin seems to define field names in an unpredictable manner, which makes it harder to use the data later on. For example, I’m adding an order field “recipient” in several stores. I then use a webhook to post the order to another system. But since I cannot define the field name, I can’t make the name consistent across stores.
