You may try temporarily deactivating plugins on your site, one-by-one. It is likely one of them is either creating this “server_admn” preventing you from deleting the user.

Do you see any specific error when you try to delete the user?

Do you see any specific error when you try to delete the user? only error is to create a user name and it cannot be changed grayed out.
