Delivery problem

So I am quoting for a fishmonger who does deliver and I have a problem, I have searched plugins but nothing as of yet so need some advice.

On Monday 5 boxes of cod are delivered to the shop for customer delivery, in 3 days the cod goes off so need to configure e-commerce as a perishable goods shop so that in 3 days its removed from the system HOWEVER if on Tuesday another 3 both come into the shop they then go on the system as 3 days and remove.

so 3 boxes will perish on Wednesday and 3 on Thursday. Would there a way to do this without manual input i.e just add the boxes and let the system work out when something has perished and adjusted stock appropriately.

The issues I have is delivering from the boat to the shop overlap
