Detecting changes in wp-config

    Would like to detect any changes made to wp-config and then pinpoint the affending plugin or ip if possible – thanks

    There is no way to get such information running a piece of PHP code as a WordPress plugin. The only correct way to protect the file is to set wp-config.php file access permissions to read-only and file owner to other user than web server is running as.
