    You can set the default post category from Wp user frontend->Form->Edit your form-Post settings and set your form category.

    I’m using as post type “Portfolio”. I’ve created previously some portfolio categories. But In the form I always see only the classic post categories, not the ones related to portfolio.

    I believe you have to specify the term of your project type in the “terms” field for the category. Keep in mind, Jetpack portfolio project post types (‘jetpack-portfolio-type’ is the taxonomy) do not use “category” as a term, can’t remember the default term but you can also make your own.
