This is certainly possible, you simply have alter the definitions of the star classes here: https://puu.sh/kfO1a/f02273e657.png in /scss/rich-reviews.scss
Since, icons are font families, if you are familiar with using custom font-families with WordPress themes/plugins, then this should be fairly simple. I would recommend just changing the definitions of the classes, rather than renaming them to match their new definitions. This way you don’t have to mess with changing every instance of those classes in the rest of the plugin.
