Different shipping Zones based on Product or Category

Just started with Woocommerce and ,loving it. I have searched the internet but can not find what I need. Perhaps I am not using the correct keywords or descriptions.

I have products that are shipped from different locations and would like to add to the Product or Category the shipping zone. This way I can setup zipping zones linked to the product.
eg: Clothing is shipped from Cape Town warehouse while Jewelry is shipped from Johannesburg warehouse.

The shipping zone is connected to the courier which will advise the courier where to collect for distribution.
