First, let me say that the “All” option is definitely confusing. “All” in the admin options (Settings >> Post Notif) means that you are making all of your defined categories available to your subscribers to select from in their “Post Notification Preferences”.
“All” on the preferences page itself means all of the categories you’ve made available for selection by the subscriber. So, regardless of how you choose to define the set of categories available to your subscribers, there will always be an “All” option on the preferences page.
Now that I read my explanation, I realize that things would probably be clearer with distinct labels, like “All categories” and “Select all” or something similar, in the admin options and subscriber preference pages, respectively.
Anyway, I hope this clarifies how this works and, in so doing, answers your question? If what you are actually wanting to do is remove “All” literally from the preferences page, you’ll need to modify the HTML itself (../post-notif/public/views/post-notif-public-display-sub-prefs.php).
