Disable outgoing emails

Hi. Great little plugin. Was just wondering if there is some way included within the plugin to actually disable outgoing emails. For example, on a development server it would be nice to log email, but to stop them from actually being sent. This is especially true when building eCommerce stores – you don’t want to send customers emails from your development/test servers.

If not, what would be your recommendation for doing this? I know wp_mail() is a pluggable function, so I guess you could just define an empty wp_mail function that does nothing. Thoughts?
