Disable the “Show All” Option

We need to be able to apply a filter by category, and disable the “Show All” option. We’re trying to show “bathroom” projects on the “bathroom” page, but the default view on the page shows *all* projects, from kitchens to living rooms, etc.
How can we hide that, and *only* show projects in the categories selected?
