Disabled day shown on placeholder on the front end

Thank you for this extremely useful plugin. It works exactly as I need it, with one small exception that I will try to explain below.
Here’s my setup: I use it for reservations, inside a CF7 form. I set it for specific hours and 6 of the 7 days of the week (Mondays are disabled). I disabled the ‘keep the placeholder’ field and set the minimum date as +1 day. I need the reservations to be made for the following day or later and not be made for Mondays, when we are closed.
The only quirk is on Sundays, when the placeholder shows Monday and the visitor is able to select an hour for Monday and submit the reservation.I managed to find a workaround, by changing the minimum date every Sunday with a specific date (the calendar date for the following Tuesday) and then on Monday changing it again to the generic ‘+ 1 day’ value.
However, it would be, of course, much easier for me if the calculation made to show the next available date on the front end would also take into account the disabled days.I also tried the ‘disable specific dates’ (to input specific dates for Mondays, for instance), but it doesn’t solve the problem with the date shown in the placeholder on the front end.
