You could change how many products per row you want to display on your store by going to Appearance → WooCommerce → Product Catalog and selecting the number of products per row you want to display with the Products per row option. It will apply to mobile and desktop.

However, there isn’t an option in WooCommerce core to select the number of products per row just for mobile; you would require customization to achieve it.
Kindly note that custom coding is outside our scope of support.
