Displaying testimonial list by category

I am using the list shortcode on a page. This is for book reviews for 2 different books each with a category named after it. What parameters would I have to add to the list shortcode so that the reviews cluster together by category? That’s the only reasonable way to sort them out, not by date or id since there will be a lot of them eventually, and I don’t want to have to keep adding id’s manually. Also, in the WP interface is there anyway to reorganize the list of testimonial? I entered them assuming I could sort them around as time goes by, and it seems that I can’t do that.
