Dont send product meta-data

You can use the filters provided by the plugin to control what metadata is sent to Stripe:

Example:

add_filter('wc_stripe_order_meta_data', function($metadata){
    // Your custom code here to unset product metadata
    return $metadata;
});

    return $metadata;

Yes that will work. You will want to make sure that you unset all of the other metadata related to products or just reset the entire metadata array if you want all of it gone. The format of the metadata keys is product_$product_id.
