Editing template file for category pulling?

Hey all,
I’m very new to WordPress development (aside from having a yyy.wordpress blog a few years back), and am in the process of putting together my website to show off as a resume for freelance writing.
What I want to do is have my main page be my latest posts on whatever I’m rambling about, and then have certain pages pull categories and display them, so I basically have a running archive.
So let’s say I post a review of a movie and coverage of E3, both of which will be categorized as “media”.
Now, I have a menu option on my bar that links to Articles > Media. I then want this page to show all the posts that have been categorized as “media”.
I’m just not sure which template file I’m supposed to use to add the appropriate tags, which I got from the WordPress Codex.
There’s not much on my site yet, but you can check out https://thatlife.jpaterson.net to get an idea of what I’m trying to accomplish.
I know that WordPress also automatically creates a list of all categories that, when clicked on, will display them all, but I don’t want someone to have to click on this; I want it displayed automatically.
Any help would be appreciated. Thanks!
