Editing Upsells/Cross Sales Section

I would like to be able to display linked products that I have chosen for each product but I would like to hide the default cross sales/upsells section since those display unlreated products using an algorithm that makes no sense at all.

I have looked at several plugins but none of them seem to allow me to hide the default sections and/or choose the individual tag that I would like to use to populate the display. For example, if I want to display only items with the tag “embroidered quilts” but there are additional tags assigned to a given product, say “baby boy quilts”, the display will show a mixture of items with either tag, not just the tag I would like.

Is there a way to force the default display to be hidden, and is there a plugin that will allow me to choose a specific tag to control the display?
