Emails delivered but entries not logged.

The plugin stopped logging emails. The emails are being delivered but nothing is showing up in the log. We were having some issues with email deliverability but the log was working fine. We corrected the deliverability issues by adjusting some MX records on October 30th and the emails are now being received, but the log is not logging them. There were 3 log entries after the MX records were changed, but nothing since November 4th. All email tests I am doing now are not showing up in the log.
There are no errors in the server logs. I also used the Health Check & Troubleshooting plugin to check for conflicts, but even with all plugins disabled and using the default theme, the plugin is not logging emails.
Any thoughts what might be causing this and how I can get this working again?
