Enroll process and limiting access to what can be viewed in dahsboard

Hi there

I’m in the middle of testing courses and getting the same feedback. I want user to go onto the site, enrol and create their account with the wordpress site and have come across the following:

– I want the email that they receive upon signup to come from my own ‘[email protected]’ rather than ‘[email protected]’
– Second when they sign up and login it takes them straight to the dashboard area with no quick link back to the course section of my site which is causing them frustration
– They can see a lot of information in the dashboard area, i’ve tried a couple of plugins now to see if I can restrict it but havent managed to find out that works well. I want them to only see their own personal information. No news feeds, or other admin options. I have my settings on ‘subscriber’ but this still shows information such as how much LearnPress Status has generated etc.

Can anyone suggest some options for the above?
