If the issue persists, it’s possible that there might be a conflict with one of the plugins that you’ve recently updated. To identify if this is the case, you can try deactivating all your plugins except for WooCommerce, and then check if the problem still exists. If the variations become visible, you can then reactivate your plugins one by one, checking the variations each time, to find out which plugin is causing the issue. Also, please ensure that your theme is compatible with the latest version of WooCommerce. If not, you might need to update your theme or contact the developer for further assistance. You can also temporarily switch to the default Storefront theme.
If none of the above steps resolve the issue, I recommend you to share the Fatal error log with us. You can find this by going to WooCommerce → Status → Logs.
