Sorry to hear you have this issue. I’ve tested the Smush on my end and could not reproduce this issue. Would you please re-install the plugin manually by uploading the file wp-smush directly to /wp-content/plugins/ replacing the old file.
If this will not resolve the issue, please run a quick test for a conflict with another plugin and theme. Before running this test, please have a backup of your site.
If you have access to wp-admin, go to Plugins and deactivate all plugins besides WP Smush. Activate the WP Smush and see if the error still there. If all is well, start activating one plugin at a time, until you will find the plugin that is conflicting.
In case you do not have access to the wp-admin, please access your site’s folders via FTP, go to ../wp-content/plugins/ and rename the plugins folder to plugins-deactivate.
Create new plugins folder, move wp-smush folder there form plugins-deactivate. Check if the Fatal error still showing. If all is well please move one folder at a time from plugins-deactivate to plugins, every time checking if teh fatal error will be back.
Please note, during this test, do not load Plugins page within the wp-admin. This will deactivate all the active plugins.
