Please try adding the code snippet below to your theme functions.php file:

add_filter( 'wpo_wcpdf_date_format', 'wpo_wcpdf_custom_date_format', 10, 2 );
function wpo_wcpdf_custom_date_format( $format, $document )
{
	if( !empty($document) ) {
		$format = 'd.m.Y';
	}
	return $format;
}

@medoblige0maciej before applying the above, could you show us a screenshot of the WordPress date format settings under Settings > General?

Additionally, I am not certain that the screenshot you posted earlier (https://ibb.co/sqBzn4m) is from our PDF. Are you certain that you are using WooCommerce PDF Invoices & Packing Slips? If so, you are probably using a custom template, because the layout from your screenshot is quite different from the default template. In that case, could you check whether you have this issue with the default Simple template too?

We implemented the code and it didn’t help. I switched to default simple and it works.
