Sorry to hear about the issues you are facing.
In regard to the categories, anytime you cannot select an eBay option or view details from your eBay account the first thing to do is to refresh your account details. To do this simply visit WP-Lister > Settings > Accounts > Click “refresh details”. Then after that, mouse over the account and click the “Update” link. Once that is complete you should be able to select categories.

As for the Error: Invalid variant specification (21920061)”” error:
This means you need to remove one of your variation specifics you are using as eBay does not allow it to be used as a variation specific.
To find out which variation specific that is, you should browse to the edit product page in Woocommerce where you should see the error at the top of the page, along with another line in the error explaining which variation specific is not allowed to be used on eBay. Then remove that variation specific, and list again.
As for Pro, these kind of issues would exist on Pro as well. Pro would have no effect on these errors as they relate to refreshing your eBay account in WP-Lister and errors relating to variation specific values that are prohibited.
