Could you try with temporarily disabling the security and caching plugins/functionality, and see if the issue persists, please?

I have disabled our cache plugin, cleared our caches, then re-enabled.
Proceeded to edit a product in catalogue and I am getting the proper sync now with no wc-logs errors reporting.
