is it possible to add to drop down menu times, place a new one after 11.30pm?

Where do you want to place them?

on the event page you have two drop downs with times the latest being 11.30, i would like to add UNTIL LATE after the 11.30 to prevent having to run it over two days in second drop down so times could show 8pm – until late

you’d need to create a custom placeholder for that. see this tutorial for pointers on how to do that:
