Excerpts in 3.5.1

WordPress has eliminated the field that used to exist underneath the Post input field. According to the Codex, this function still exists but it doesn’t show up until you have already created an Excerpt. (Catch 22?) So, is there a way to create an Excerpt so that this field will reappear? Is there a plugin? Is there some obvious solution that I am just not seeing?
