exclude certain plugins / forms from using it

I am using Contact Form 7 – and had set it up so the from field became whatever email the user entered. This is great because it means when an email lands in the inbox you can just hit reply and email the user directly back.
Then we installed Configure SMTP to solve something … and it does that nicely.
However, Configure SMTP is over ruling the from field in Contact Form 7 for the email it sends (which I get it’s meant to do) … This means having to copy and paste the user’s email address when we want to reply to their enquiry.
I am wondering if there was some way to exclude Configure SMTP from being enabled for certain plugins / forms / pages?
Ideas or solutions wold be greatly appreciated – thanks!
