is it somehow possible or a plugin for exporting customer data, with everything they’ve ordered including the order data with the ip address used. Or in general a export of all customers with the ip address included?

You can use the WooCommerce Customer / Order / Coupon Export extension to export most WooCommerce-related data, including the customers IP addresses.
