[Fast Secure Contact Form] Default Values for drop downs

I have just downloaded Fast secure contact form which seems to be just what I was looking for except I can’t work out one thing. When using a select form field I know how to populate the option values but what I want to do is put a ‘Please select…’ value which is the default selected option but has no value so that when it is a required field it forces the validation to mark it as not being valid.
