Can you navigate to WooCommerce > Status > Logs (tab), and in the dropdown on the right side, do you see anything for Fatal Errors dated around the time you made the update? If so, that might help you pinpoint where the error is coming from.

I would also recommend running a conflict test as described here: https://docs.woocommerce.com/document/woocommerce-self-service-guide/
