Fatal error

So I migrated my site and restored from back up. Everything was fine for a week, so I destroyed the instance of our old server. The next day when trying to update WooCommerce we got a fatal error so we restored from backup again. Within a few minutes we noticed a trend every time we did anything with WooCommerce the WordPress site would crash, and we would again restore from backup. It has been 5 days trouble shooting and I cant find the issue. I noticed that our old backup had 250 tables but all the backups that I have for the last 2 weeks have fewer tables. Each backup says it has been done successfully, and we have tried all the back-ups from the last two weeks all with the same issues. Could it be possible that this plugin does not backup all the tables?
