I had the same problem.
I downloaded version 6.5.1 of the plugin via this link (see bottom of page):
https://www.ads-software.com/plugins/woocommerce-payments/advanced/Then I put all files/folders in the FTP wp-content/plugins/woocommerce-payments to replace the latest version of the plugin.
Everything works again.
Waiting for a new corrected version of the plugin.Sorry for my English, I’m French.

We apologize for this conflict issue. It’s a conflict between WooPayments and other plugins/themes when using a common PHP package.
That said, we could be able to fix it, and release the fix in the recent 6.6.1 version.Update: sorry everyone again, I mislead the information that 6.6.1 included the fix for this issue. This issue is still being worked on.
