Can you please confirm whether you’re not seeing the favicon for your site in the Google mobile search results or in the desktop search results?
Please note that Google introduced the favicon in the desktop search results as an experimental feature and it was reverted back.
That said, we have tested the homepage https://hike-israel.com of your website in the search results and can see that Google mobile search results isn’t showing the favicon.
We see the homepage includes the following favicon meta and these are valid:

However, Google recommends to have the 48x48px
, 96x96px
, 144x144px
and so on favicon sizes. You can find the Google guidelines for favicon here and make sure that your site has the same implementation.
On the other hand, we can confirm that Yoast SEO is generating all the schema markup and as well as the SEO meta correctly as expected and there’s nothing in Yoast SEO plugin that is preventing Google to show the favicon in the mobile search results for your site.
