I often have to copy production sites to a local environment to work on them and if they have postmark installed it can lead to weird emails being sent to clients. I’d like to be able to just have the Postmark plugin settings defined as constants in the local wp-config.php file (which doesn’t get copied from the production site) to send all emails to myself on development environments and/or turn off postmark.

See WP Mail SMTP plugin feature for the kind of feature I would like to see: https://wpmailsmtp.com/docs/how-to-secure-smtp-settings-by-using-constants/
